Easy Breezy Pumpkin Pie

It’s fall and pumpkin pie is all the rage! If you love the taste of a fresh pumpkin pie but have never tried to make one, this recipe is for you. It’s quick, easy and delicious.

  • 2 Eggs
  • 15 oz can of Pumpkin
  • 1 can of evaporated milk
  • 1/4 cup truvia sweetener (healthy substitute for granulated sugar)
  • 1/4 cup light brown sugar
  • 1 teaspoon of pumpkin spice
  • 1/2 teaspoon salt
  • dash of cinnamon
  • store-bought pie crust

  • Mix the sugar & spices in a small bowl
  • Beat the eggs & pumpkin together in a large bowl
  • Slowly add the sugar & spices into the the large bowl until mixed thoroughly
  • Slowly add the can of evaporated milk until completely stirred into the mix

Baking Instructions

  • Preheat over to 400 degrees IMG_0509
  • Unroll the store-bought dough and press into pie pan. Push down on the outside edges
  • Pour the filling into the crust
  • If using an aluminum baking pan, place on top of a regular cookie sheet
  • Bake at 400 degrees for 15 minutes
  • Reduce heat to 375 and bake an additional 35 to 45 minutes

Cooling Instructions IMG_0512

  • Take pie out of the oven and let cool in room temperature for 30 minutes
  • Place pie in the refrigerator for at least 1 hour
